I finally had a chance to use the petite loaf pan that I got for Christmas. I found a great recipe for nutella banana bread which I modified to work with this pan.
Ingredients:
1/4 cup (softened) butter
3/4 cup sugar
3 (very ripe) mashed bananas
2 large eggs
1/3 cup low fat plain greek yogurt
1 tsp vanilla
2 cups flour (1 cup all-purpose, 1 cup whole wheat)
1 tsp baking soda
1/2 tsp salt
1/2 cup nutella (or to taste)
Instructions:
In the bowl of an electric mixer, beat butter and sugar until well combined. Add banana, eggs, yogurt and vanilla. Mix until well combined. Add the flour, baking soda and salt and mix by hand with a spatula until well combined.
Spoon half of the batter into paper liners in a petite loaf pan. Spread nutella onto batter of each loaf. Cover nutella of each loaf with the remaining batter. Bake for 25 minutes at 350 degrees. Let cool in the pan on a wire rack.

oh yum yum yum! i had a jar of nutella yesterday, which is pretty bad so i won't be doing this for a while unfortunately. But yeah Nutella is my weakness.. xx
